Meet Bailey the Bilby – Celebrate Easter and Make a Difference!
In 2025, The Chocolateries introduced the adorable Bailey the Bilby collection as part of the Save the Bilby Fund Easter campaign. The collection was created to offer an Australian alternative to traditional Easter bunnies while helping raise vital funds for bilby conservation.
The Bailey the Bilby campaign is continuing in 2026 and beyond, giving supporters more opportunities to celebrate Easter with bilbies, not bunnies. Available at The Chocolateries in the Yarra Valley, Great Ocean Road and Mornington Peninsula, these year-round bilby treats support an important conservation cause.
Join us this Easter and help bilbies bounce back and thrive across Australia. In 2027, Easter Sunday falls on 28 March.
Support a Great Cause This Easter
This Easter, the charming Bailey the Bilby by The Chocolateries is back. These delightful treats are now a part of their year-round Australian Animals range, and your purchase helps support a vital cause.
As Australia’s answer to the Easter Bunny, bilbies are a unique and beloved species. Known for their long ears and burrowing behaviour, bilbies have a similar role in the ecosystem as rabbits, but unlike their more famous counterpart, they are now critically endangered. Once found across 70% of Australia, bilbies’ numbers are rapidly declining.
To help protect these precious creatures, The Chocolateries is donating 50c from every Bailey the Bilby sold to the Save the Bilby Fund.

Together, they’ve created three iconic locations in the Yarra Valley, Great Ocean Road, and Mornington Peninsula (Bendigo coming soon) —each offering a magical chocolate experience for visitors of all ages.
Their talented team of European chocolatiers, pastry chefs, and passionate local staff create thousands of handmade chocolates, from signature truffles to classic favourites. At The Chocolateries, the journey of chocolate matters just as much as the experience. With a commitment to sustainable sourcing, Ian and Leanne ensure that each piece of chocolate is made with care and responsibility.
